Who doesn’t love a one-pot meal? It’s easy to make, it’s easy to clean up, it’s full of flavor, and it saves time. And when you get 125 recipes that all take less than an hour, most take half that time, then why wouldn’t you grab that chance? The Simply One Pot Cookbook is perfect for those days when you don’t want fast food or pizza again but need something fast and easy to cook for your family.

There are recipes for salad, soup, pasta, seafood, meat, vegetarian meals, and even breakfasts. Recipes that are or have options for gluten-free, dairy-free, and nut-free have logos, so they’re easy to find. And most need 10 or fewer ingredients, many that you can find in your pantry, fridge, or freezer (especially when you stock those with the suggested lists of ingredients to keep in your pantry, fridge, or freezer).

Most recipes call for one of only 6 dishes, but there are lots of options for substituting if you don’t have them all or don’t want to spend the money on one until you’re sure you’re going to use it. But if you want them all, you’ll need is a skillet, saute pan with a cover, baking dish, sheet pan, stockpot, and Dutch oven.

With those you can make a Cinnamon Roll French Toast Bake, Veggie Egg Scramble, Baked Blueberry Oatmeal, or Breakfast Pizza for breakfast. You can make soups like a Beef and Vegetable Soup, Shrimp and Corn Chowder, Philly Cheesesteak Soup, Chicken Enchilada Soup, or Red Lentil Soup. There are recipes for pastas, like a Three-Cheese Mac and Cheese, Skillet Lasagna, Taco Pasta, Meat Lovers’ Pasta, Steak Fajita Pasta, or Sun-Dried Tomato Pesto Gnocchi with Veggies.

If you want something vegetarian, you can make Vegetarian Chili, Spinach and Artichoke Pizza, Vegetarian Curry, Lemon-Broccoli Risotto, or Tuscan Eggplant and Rice. Or you can make seafood, like a Mediterranean Flounder Saute, Salmon Couscous Bake, Low Country Boil, Cheesy Tuna Pie, Creamy Crab Casserole, or Swordfish Quinoa Bake.

Looking for chicken? Try the Cider-Braised Chicken and Cabbage, Buffalo Chicken and Rice Saute, Garlic-Soy Chicken and Green Beans over Rice Noodles, Chicken Coconut Curry with Rice and Greens, or Skillet Chicken and Noodles. Or jonesing for some meat? Try the Sweet and Sour Meatballs and Cabbage, Pork Chop with Creamy Potatoes, BBQ Pork and Rice, Sheet Pan Surf and Turf, Meat Loaves with Potatoes and Tomatoes, or an Egg Roll Cauliflower Rice Bowl.

I love one-pot recipes, and I love the variety of recipes in the Simply One-Pot Cookbook. But I can’t help but wish there were more photos of the dishes. I love to look at the pictures and get inspired by what I see, and most of these recipes don’t have pictures with them. But that aside, author Eileen Kelly has put together a great collection of recipes for busy cooks and for those who (like me) hate to have to wash a lot of dishes!
